Sales of Irish whiskey have been one of the big success stories in the Single Malt Shop, explains Glen Melia, sourcing manager. “Since we set up, it’s been great to see more and more new distillery releases from across Ireland. After years of maturation, the whiskey produced at these exciting new distilleries has started to become available, and it is incredible to follow their stories,” he says.

Released with the 2021 edition of the annual Bushmills Causeway Collection, this wonderful single malt spent seven years in ex-bourbon and oloroso casks before being finished for two years in Sauternes. 

Sauternes is a French white wine made from semillon, sauvignon blanc and muscadelle grapes and delivers a beautiful dessert wine sweetness to the Bushmills. 

Bottled at cask strength of 56.3%, a drop of water opens this whiskey wonderfully, releasing all those wine notes alongside the vanilla, oak and dark fruit of the oloroso.
