For the Japanese whisky conglomerate Suntory, its Hakushu distillery is designed to represent difference. First built in a mountain forest in 1973, the environment around its location on Mount Kaikomagatake in Japan’s Chubu region delivers a slice of this difference. But it also comes from the extremely low mineral content of the water that flows down the mountain and into each of Hakushu’s releases.
