Released with the 2021 edition of the annual Bushmills Causeway Collection, this wonderful single malt spent seven years in ex-bourbon and oloroso casks before being finished for two years in Sauternes. 

Sauternes is a French white wine made from Semillon, sauvignon blanc and muscadelle grapes. It delivers a beautiful dessert wine sweetness to the Bushmills. 

Bottled at cask strength of 56.3%, a drop of water opens this whiskey wonderfully, releasing all those wine notes alongside the vanilla, oak and dark fruit of the oloroso.
